Easy Mushroom Stew With Quinoa (And Greens Optional)
I was craving the mushrooms I just bought at Target, and so decided to make a nice quick and easy stew. It did come out quite tasty too!
Here is what it looked like with the addition I did for the second serving, which is add greens to it:
Ingredients Needed:
- 1 Medium Sweet Onion
- Extra Virgin Olive Oil
- 1 Package Crimini Mushroom (Pint sized, and any mushrooms will work)
- Chicken Bullion/Base
- Trader Joe’s Garlic Seasoning
- Quinoa
- Water
- Target Power Greens (Optional)
- Pepper (I use the multi-colored)
First Steps:
Dice the onion
Slice the mushrooms (you can buy them sliced also)
Add 2 tablespoons Olive Oil To A Pot (At least a half gallon size)
When oil is hot, add the mushrooms and onion
Sautee until they start to brown (around 10 minutes)
Next Steps:
Add 4 cups water and bring to boil, then switch to a slow simmer.
Once at a slow simmer, add 1 oz (dry measure) of the quinoa (this is 1/8 cup)
Add 1 Tablespoon Chicken Base, or 2 cubes.
Let simmer for 10 Min
Then taste and add a little more chicken base, or 1 more chicken bullion cube if it could use it (go by your own taste preference)
And don’t worry if you add it and then think it’s too salty, then add another 1/2-1 cup of water to dilute the flavor.
Let it simmer for another 5 minutes and then turn off the heat, and add some Trader Joe’s Garlic Seasoning, and some pepper to taste.
Serve After It Sits For Another 10 Minutes
Greens Option – and Reheating
The first bowl I had was tasty, surprisingly so for such a simple dish.
This time I wanted to get in some greens, and also adding the greens helped to cool off the soup after I reheated it, so I could eat it right away.
To Reheat:
I just brought it to a full boil on high heat, and added maybe 2 ounces of water, as typically it will evaporate some from the initial cooking, and reheating.
Tonight I just had the second bowl that was leftover after cooking. This time I added greens to it.
I added a handful of these greens right after it finished boiling:
With these, I add them in straight from the container. You can wash them if you like. For me, they say triple washed, and I have had this green mix a bunch of times, and they are always clean and fresh 🙂
